The Food
The kitchen balances a dizzying array of flavors and textures in its deep selection of contemporary Creole dishes. The offerings are a little more experimental here than at Emeril's, where Lagasse's "new classics" take center stage. The current Nola menu showcases a variety of techniques and ingredients from Pacific Rim cuisines. The paillard (quickly grilled breast scallop) of chicken incorporates earthy portobello mushroom, chevre-potato ravioli and smoked shoestring onion rings into the flavorful winner.
